shrimp bisque

There are two ways you can go at this, Shrimp Stock or use Seafood Base. I typically will use the shells to make the stock but you can save a little time by substituting base

Here is a recipe for Lobster Bisque that can easily be transformed into Shrimp.

Lobster Bisque Recipe

1 cooked Lobster & Shell

1 cup white wine

1 cup brandy

In a stock pot over high heat drop the cooked lobster shell (set meat aside) in and begin to brown, then add the wine and brandy and reduce.

6 cups water

12 pepper corns

1 bay leave

1 medium onion (rough chop)

1 carrot (rough chop)

2 stalks celery (rough chop)

After the wine, brandy and Lobster Shell reduce to about a half cup of liquid add the water, peppercorns, bay leave, onion, carrot, and celery. Turn to low heat and simmer for 45 minutes. Strain and reduce to half.

6 cups Heavy whipping cream

Roux

Lobster meat (medium chop)

Add cream and bring to a boil, then add roux until desired thickness. Finally add Lobster meat and season to taste.
