I've got a good recipe for summer sausage and would like to spice it up a bit and dont want it to be overbearingly hot just the taste of it. how many jalepeneos per pound and do you use the jucie? thanks for any info on this. I know I will use 2 medium size jalapenos for a recipe with all seeds out, I have and it calls for 1 pound of meat, and it is spicy but not OMG spicy...I am sure someone probably has a more accuract answer though Link to comment Share on other sites More sharing options...

DIRTY BIKER Posted December 14, 2006 Share Posted December 14, 2006 I think that 2-4 fresh per pound would be good or take the seeds out for a little milder but canned I think you need to use more like double that most canned peppers lose a little power.I want to try and mix pepper cheese with summer sausage or beer sticks next time has any one tryed it? Sounds good to me but dont know if it will work or not never did any with cheese so dont know if it takes a special cheese or not anyone ever did it? I stopped at a meat market and they sold me a pound of high temp. cheddar for a little under 5 bucks. Haven't tried it yet but I will soon!
