Gissert Posted November 27, 2006 Share Posted November 27, 2006 I'm with Deitz here. Any kind of smoked or jerked meat that is cooked at low temps needs a cure. Botulisim, among other things is a real possibility.Curing salt is cheap. I get my supplies online from Eldon's Meats. Nice little site, with lots of great sausage and jerky seasonings.
