Johnsonator
Anybody have any good recipes for trout. I have tried it once and the meat was on the skin and it was kind of greasy. I really like fish fried, can you do it the same as walleye. Johnsonator
bigdog
Trout is an oily fish so it will be a bit greasy depending on how you cook. I haven't tried deep frying but pan frying would be greasier than a walleye. I broil mine which allows the grease/oil to drain away. On larger fish, 15" and bigger, I split them before placing on the pan. Sprinkle them with lemmon pepper or what ever seasoning you prefer and broil until flaky or dry depending upon your taste.[This message has been edited by bigdog (edited 01-15-2004).]
fishnutbob
We just came back from canada, and did trout over a wood fire it was great, put trout fillet in tin foil wrap good double or triple so you dont burn them leave skin on cut onions put in butter and strips of bacon and season with parmesan cheese. cook till it flakes and its done, some add a little hot sauce over it,salt pepper and i also like Old Bay seasoning. good eating
uffdapete
I seldom eat stream trout as I like to fry fish too and just haven't enjoyed fried trout much.Last year we caught some lake trout through the ice and fried them over a camp fire and they were delicious! I will release any trout I can't eat fresh though unless I wanted to smoke one.
SilverLakeBoy
I use one of those folding fish baskets and slice an onion as if you were making onion rings. Lay a bed of the rings on the bottom of the basket, place your seasoned trout (butter garlic lemon pepper etc.) fillets on top of the rings and put rings on top of fillets, close basket and grill to perfection. The onion rings add alot of flavor and your fish dont stick to the fish basket because of them, but they burn enough that you probably don't want to eat the onion. this works pretty well for most any larger fish fillets.
