fishinphyl Posted October 20, 2002 Share Posted October 20, 2002 We ate at a restaurant last night that served what they called Raspberry Creme Dessert. It was served in a margarita style glass. The bottom was the consistency of pudding and was white. It tasted like it had sour cream or cream cheese in it. Then this was topped by whole raspberries in a raspberry sauce. This was so awesome! I looked at the brulee recipes first but they look more like a custard this is the one I found that looks really close except it is moled and this was more like a pudding:1 package unflavored gelatin 1/4 cup cold water 8 ounces cream cheese, softened 1/2 cup sugar 1/2 teaspoon almond extract 1/8 teaspoon salt 1 cup milk 1 cup cream 10 ounces frozen raspberries 1 tablespoon cornstarch 2 tablespoons sherry Directions In a small saucepan combine unflavored gelatin and cold water; cook over low heat, stirring until the gelatin dissolves. Set aside. In a bowl combine softened cream cheese, sugar, almond extract, and salt; beat until smooth and creamy. Gradually add milk and the gelatin mixture to the creamed mixture; stirring well. In a bowl beat cream with an electric mixer on medium speed until soft peaks form. Fold into the gelatin mixture. Pour into an oiled mold and chill until set. Meanwhile, drain frozen raspberries, reserving the juice. Press through a sieve, removing the seeds. Combine the reserved juice, cornstarch, and sherry in a small saucepan. Cook over low heat, stirring constantly, until smooth and slightly thickened. Stir in the raspberry pulp. Cool. Unmold the gelatin mixture onto a serving dish, spoon the raspberry sauce on top. fishinphyl Posted October 28, 2002 Share Posted October 28, 2002 Just had to pat myself on the back I made the recipe for raspberry creme which is above. It was not quite what we had at the restaurant-too sweet. So, I stirred in a little sour cream and presto I have duplicated the secret recipe! If you want to try it I would add about 1/2 cup of sour cream, I am just guessing because I had already taken out 2 servings when I started this project.
