Looking For Raspberry Creme Recipe

We ate at a restaurant last night that served what they called Raspberry Creme Dessert. It was served in a margarita style glass. The bottom was the consistency of pudding and was white. It tasted like it had sour cream or cream cheese in it. Then this was topped by whole raspberries in a raspberry sauce. This was so awesome! Very rich. Does anyone have a recipe for it?

Could the creme part have been creme brulee? There is a recipe for Vanilla Creme Brulee with Raspberries on epicurious.com. Just put in creme brulee as the keyword to find it. It might be close to what you had. Good Luck!!

Hi ozzyjay. I looked at the brulee recipes first but they look more like a custard this is the one I found that looks really close except it is moled and this was more like a pudding:
1 package unflavored gelatin

1/4 cup cold water

8 ounces cream cheese, softened

1/2 cup sugar

1/2 teaspoon almond extract

1/8 teaspoon salt

1 cup milk

1 cup cream

10 ounces frozen raspberries

1 tablespoon cornstarch

2 tablespoons sherry



Directions
In a small saucepan combine unflavored gelatin and cold water; cook over low heat, stirring until the gelatin dissolves. Set aside. In a bowl combine softened cream cheese, sugar, almond extract, and salt; beat until smooth and creamy. Gradually add milk and the gelatin mixture to the creamed mixture; stirring well. In a bowl beat cream with an electric mixer on medium speed until soft peaks form. Fold into the gelatin mixture. Pour into an oiled mold and chill until set. Meanwhile, drain frozen raspberries, reserving the juice. Press through a sieve, removing the seeds. Combine the reserved juice, cornstarch, and sherry in a small saucepan. Cook over low heat, stirring constantly, until smooth and slightly thickened. Stir in the raspberry pulp. Cool. Unmold the gelatin mixture onto a serving dish, spoon the raspberry sauce on top.


Serving Size: 8

Just had to pat myself on the back grin.gif I made the recipe for raspberry creme which is above. It was not quite what we had at the restaurant-too sweet. So, I stirred in a little sour cream and presto I have duplicated the secret recipe! If you want to try it I would add about 1/2 cup of sour cream, I am just guessing because I had already taken out 2 servings when I started this project. It should have just a hint of sour cream and not be sweet.

Ohhhhhh it's sooooooo good! And it's a secret! grin.gif

    • Chamois passed away this weekend a couple days short of her 13th bday. What a great dog to hang out with here at home and on distant adventures. Gonna miss ya big time my little big girl.

    • If you really want to treat your wife (and yourself) with a remote operated trolling motor, the Minn Kota Ulterra is about easy as it gets.  Auto stow and deploy is pretty awesome.  You just have to turn the motor on when you go out and that the last time you have to touch it.   24V 80lb.  60 inch shaft is probably the right length for your boat.  They ain’t cheap - about $3k - but neither one of you would have to leave your seat to use it all day.
    • Wanderer, thanks for your reply. I do intend for it to be 24 volt, with a thrust of 70-80. Spot lock is a must (my wife is looking forward to not being the anchor person any more).  With my old boat we did quite a lot of pulling shad raps and hot n tots, using the trolling motor. Unlikely that we will fish in whitecaps, did plenty of that when I was younger. I also need a wireless remote, not going back to a foot pedal. We do a fair amount of bobber fishing. I don't think I will bother with a depth finder on the trolling motor. I am leaning toward moving my Garmin depth finder from my old boat to the new one, just because I am so used to it and it works well for me. I am 70 years old and kinda set in my ways...
    • Dang, new content and now answers.   First, congrats on the new boat!   My recommendation is to get the most thrust you can in 24V, assuming a boat that size isn’t running 36V.  80 might be tops?  I’m partial to MinnKota.     How do you plan to use the trolling motor is an important question too.     All weather or just nice weather?   Casting a lot or bait dragging?   Bobber or panfish fishing?   Spot lock?  Networked with depth finders?  What brand of depth finders?
    • We have bought a new boat, which we will be picking up this spring. It is an Alumacraft Competitor 165 sport with a 90 horse Yamaha motor. I will be buying and installing a trolling motor,  wondering if I can get some recommendations on what pound thrust I will want for this boat?  Also, I will be selling my old boat, is there a good way to determine the value on an older boat ( mid-80's with a 75 horse 2-stroke  Mariner motor)  I will appreciate any help with these questions.
