fishinphyl Posted September 6, 2002 Share Posted September 6, 2002 Do you like them fried? Fillet them, mix some cornmeal and flour - more flour than cornmeal. Add salt, pepper and parsley. Beat some eggs and a little milk up. Dip the fish in the egg then the flour mix then the egg and back to the flour mix. Fry in a cast iron pan and you can't go wrong. Drain on a rack not a paper towel and they will stay crisp. Borch Posted October 3, 2002 Share Posted October 3, 2002 Here's a good one.Crush a couple packages of saltine crackers(I use a blender to crush them real fine.Add about 1/2 cup of corn meal. 1 tablespoon of cajun seasoning 1 teaspoon of season saltDip Dry fish fillets in a couple of beaten eggs. Then coat in cracker crumb mixture and place in a frying pan of HOT oil. Fry 2-3 minutes on each side(till golden brown). Place on a plate with a layer of paper towels.Goes very good with panfish. Guest Posted October 4, 2002 Share Posted October 4, 2002 I've tried a lot of homemade recipes but I always go back to Shorelunch. Cajun Shorelunch is my preferred way of fryin crappie and gills. Cajun Shorelunch, salt, pepper, flour, milk, (some times you can add egg but I prefer not to). Works good for walleye too.Good Fishin, Matt. I mix regular Shorelunch with a portion of Cajun Shorelunch so that way you get the hint of Cajun that isn't too strong. I don't mind spicy food but I don't like to mess with the fresh caught fish. Dano2 Posted October 8, 2002 Share Posted October 8, 2002 I agree with all of you, LOL.I like the italian shore lunch,I dont even dip in any egg,I just take my pieces, throwthem in a Big container with shoreluch and shake , shake, shake, then fry.I will have to try some of these other recipes, i hear of alot of people using the cornmeal thing.Bass, I cut into smaller pieces, and soak in milk for about an hour,Ya, I know what you folks are saying,BASS? Once you get the hang of this tecnique, you can clean panfish without scaling or even gutting.
