Hoovey Posted January 10, 2002 Share Posted January 10, 2002 I have had good luck with grinding the beef or venison and then using a jerky gun to lay out the strips on the dehydrator trays. Make sure to trim as much fat off of the meat as possible before grinding. I have used the dry seasonings that they sell at Cabela's and Gander Mountain, I believe they are "Hi -Mountain" brand or something close to that. They are pretty decent. I have also tried some of the marinades that can be found in the "Just Jerky" book also sold at those stores. I prefer the marinades myself. Havin' Fun Posted January 16, 2002 Share Posted January 16, 2002 Have had very good luck cutting strips of meat and marinating them in a "secret sauce" for days, then dehydrating them. Best stuff I've ever had. I use the powder from the dehydrator company. Jerky Works I think. But I add soy sauce, tomato juice, and garlic. Then let it soak in this for days, stiring to keep it evenly soaked, and then before dehydrating, I pepper the hell out of it.Good luck.Just remember to trim all talo and fat off. Capt'nJosh Posted January 23, 2002 Share Posted January 23, 2002 I just use that Mesquite Hi-Mountain seasoning referred to in the earlier post. Just slice the meat 1/4 inch thick, spread the seasoning over it and let it sit for a day in the fridge. They dehydrate it until its the right toughness for you!
