Knife Sharpeners

What do you guys use to sharpen your fillet knives? Also, is there a good shop that anybody can recommend that does sharpening for all knives. I have a gatco kit that has the stone on a stick, but seems like nothing beats the job done by a pro.

I have had excellent results with the Lansky system. They are a little slow if your edge is really messed up, but once you have the proper bevel, a quick touch up gets them going again.

I have brought back several knives into good condition that were in terrible shape. Now, if I get a bad one, I have a pro do it on their machine, and then just stay on top of it with the Lansky.

I have used alot of these stones and electric sharperners. The best one I own is a key chain size one by Smith's with ceramic and carbide stones. I think they're around $4.00. The ceramic wears out about once a year, but for the few bucks who cares. I keep one on the boat and at home.

I had/have 2 fillet knives that were in really tough shape to a sharpening service over by Johnson Pkwy and 7th St in St Paul. One had the tip busted off. The other just needed a good edge put back on it. The one took a bit more work but you could shave hair with both when he was done.

i use the edgemate by GATCO it is a carbide sharpner about 15.00 bucks it is the best one i have ever used all you need is about 3 strokes on it and it is sharper then new
