Deitz Dittrich Posted December 15, 2005 Share Posted December 15, 2005 Ice-My wifes fave way to eat fish is a recipe I call Perch Parmesean. But I use any fillet for this.. I have posted this many times on this board and have yet to hear someone that doenst like it.Take smaller fillets, bluegill or crappie or perch seem best. However, I have used walleye, talapia and pike too... Just make sure the fillets aren't to thick.Take mayo and coat the outside of the fillet, not too much, just enough to coat the fillet, sprinkle with salt and pepper.. Place on a baking sheet. Then Sprinkle/cover with REAL parmesean cheese, not the can stuff, real grated stuff... Then broil them for about 7-9 mins.. untill golden brown. DONE! That kind of thing... or even switched up the cheese a little and gone to a more spicy cheese..Really give this one a shot, its well worth it.. And super easy! Tripleplay Posted January 10, 2006 Share Posted January 10, 2006 I finally tried this one at home with mixed results. I liked them but my wife and kids didn't care for them. Honest truth is when parmesan cheese is broiling it puts off a different smell and I've got one daughter who at age 13 still smells everything before she eats it. So I basically knew this wasn't going to be a winner for her since whe was complaining about the cooking smell before she got to the table.I also fried up some walleye and crappies so they did not leave the table without a full serving of fish they just went after the fried and left me the broiled which wasn't a bad trade off. After coating the fillets with mayo, roll them in cornflake crumbs, just as if you were going to fry them. Then, grille over coals (the best), but be careful not to burn, or bake on a pan in the oven. Suprise! no mayo taste. Time will depend on the size of filets. I like them finger size.
