I've got this recipe to use up my duck breasts but it calls for 12 hours of smoking. Mike Walerak Posted November 10, 2004 Share Posted November 10, 2004 I have never smoked my jerky for over 4 hours. I usually get r done in about 2-3 hours. I use the High Mountain Jerky mix and then just smoke it until I think its done. Just did 7 punds of mallards yesterday and they turned out great after being smoked for 2 hours.mw Link to comment Share on other sites More sharing options...
PikeTipper Posted November 10, 2004 Share Posted November 10, 2004 I've only done Jerky in the oven. I use the wife's cookie cooling racks and put them in the oven at 200 degrees for about 3 hours. For marinade I usually just buy whatever looks good from the Lowry marinades and let the strips marinade overnight. This cooks the meat more than actually drying it but I really like it this way and I don't have to have the oven on all day at a lower temp. I don't add cure though so I only make smaller batches that I will usually eat within a week or 2 and keep it refrigerated. Link to comment Share on other sites More sharing options...
