Duck/Goose Smokeless Jerky?

Anyone have a good replacement for 12 hours of smoking? I've got this recipe to use up my duck breasts but it calls for 12 hours of smoking. Does someone have an alternative to smoking or a recipe that doesn't call for this?

I have never smoked my jerky for over 4 hours. I usually get r done in about 2-3 hours. I use the High Mountain Jerky mix and then just smoke it until I think its done. Just did 7 punds of mallards yesterday and they turned out great after being smoked for 2 hours.

I've only done Jerky in the oven. I use the wife's cookie cooling racks and put them in the oven at 200 degrees for about 3 hours. For marinade I usually just buy whatever looks good from the Lowry marinades and let the strips marinade overnight. This cooks the meat more than actually drying it but I really like it this way and I don't have to have the oven on all day at a lower temp. I don't add cure though so I only make smaller batches that I will usually eat within a week or 2 and keep it refrigerated.
