Using fresh fish makes for better texture for me. Usually cut up fresh fish in small pieces and put them in a food processor for a few spins. Cooked or canned fish make the patties "softer" but the flavor is still fine and I was in the mood for some fish patties anyway. Made some fried potatoes as the side [a must have with fried fish or patties for me]. Fried the potatoes with bacon and left the skin on the potatoes of course. In the mix was canned salmon, canned tuna,Italian bread crumbs, plain yogurt, 2 eggs, kechup, dried minced onion, and dried dill. good luck. Everything is in the bowl to be mixed up. I wait until the bacon forms some grease and get's a little brown before I add the potatoes.
