Smaller venny summer batch

Smoking a 3 pound batch in the morning.  In the fridge till then.  Pics later.

2 pounds venny

1 pound pork

3T  Tender Quick

1T pepper

1T Paprika

1 Tsp Garlic powder

1 Tsp Onion powder

1/2 cup cut up small dried cranberries

1/2 cup water

I have done this in the past but it's been a few years.  Plan on smoking with a hickory,cherry mix.

Awsome!! I gota stop looking at all this summer sausage, I want to  do some real bad, I usually wait till after der season and before ice season, i do it to soon the all the awsome iceshack snaks are gone.
