I thought it would be like carp til I filleted it and the meat on the females was almost white the male fillets were carp color. So I guess my question would be so you just treat it like a carp? ThunderLund78 Posted January 21, 2015 Share Posted January 21, 2015 I haven't done it myself but a friend of mine just tried smoking buffalo this year after he speared a couple while going for carp and pike. The flesh is white but he brined and smoked just as he did the carp. I haven't tried it yet, but he said it was excellent. It's white fish but not as dry as a northern or a walleye.
