I too like to bake bacon. One of my favorites when baking is to make a batch of sugar bacon. There are tons of recipes online. I usually do one pound of bacon, half cup of brown sugar and tablespoon or two of dijon mustard. Mix the ingredients in a bag and bake. I eat some of it warm and serve some cold later as a snack.
