I made a batch of pickled pike that turned out great.

24 hours in salt water brine

24 hours in white vinegar

boil 3 1/2 cups sugar in 3 1/2 cups of vinegar cool

pour over layered onions and pike with table spoon of pickling spices wait 10 days enjoy.

I really like the flavor but I am also diabetic has anyone ever substituted splenda or truvia for the sugar? In vinegar pickling the sugar is for flavor not preservation so I assume it should work just wondering if anyone has tried it? Also posted in cooking section
