hot stick help

I made a batch of hotsticks with 93/7 hamburger. nesco hotstick mix. mixed & left in fridge overnight. used the jerky shooter with round attachment & nesco dehydrator.

question is how many hours do you think it should take to finish product. I had them in for 9 1/2 hours. I think they are tough. time seems excessive.

do I need a thermostat to check temp next time?

any advise on making these is appreciated.

the flavor is ok but they seem rubbery.

dog doesn't seem to care tho.

Your using a dehydrator.

Temp means nothing as your not bringing anything up to temp or holding at a temp.

What your doing is drying out the meat.

The cure( nesco hotstick mix)is what is making your product safe with flavor added.

If you like the flavor but think its too tough/chewy reduce the dry time.

The drying time is a generic deal. Time of year(humidity levels), brand dehydrator, and personal taste make for a difference as to when your product is done.
