But I've got a few good recipes of my own, and I'm willing to share them. One at a time. Here's mine: Butter or olive oil 1 cup of 1/2'' cubed chickens, chants, or oysters (if using chants or oysters, use more, as they'll cook down considerably) 1/2 cup of artichoke hearts (add more or less depending on your taste) A handful of green olives (add more or less depending on your taste) pimientos (if you're curious) Some slivered almonds (optional, but I like them) A shallot if you're bold Some pesto sauce Mayonnaise French bread/ciabatta/white bread Before frying up the shrooms, artichoke hearts, green olives, and assorted and optional goodies, mix up in a separate bowl some pesto and mayonnaise. Go with more pesto than mayo...you just want a creamy sauce that's a light green. This should take about 2 minutes. Then, melt butter/heat up olive oil before tossing in the shrooms, artichoke hearts, pimientos, and the shallot. If adding the almonds, wait a bit, as they'll burn if in the pan too long. If you haven't by now, put the bread in the toaster. When all's done, put the toasted bread on a plate. Put the materials from the pan (the shrooms, artichoke hearts, pimientos, almonds, etc.) on the toast. Then put on the mayo/pesto mix. It'll melt over the hot bits, and you'll have a meal fit for a king, president, union boss, tenured professor, or even a lesser mortal if need be. Oh, and if yer super fancy, toss some cheese on it. pushbutton Posted July 30, 2013 Share Posted July 30, 2013 Not much into measuring or recipes, but most of my mushroom ones start with the quadrinity of shrooms, butter, onion, and garlic....pepper, salt, earthy herbs optional. Breakfast...... sautee up small diced quadrinity....just made this name up, but a take off from Emeril's trinity. Line/make pockets in a muffin pan with deli/thin sliced ham. Add the quadrinity till about 3/4ths full, then crack an egg over the top and bake at 350 isn till the egg is to your runniness ...or lack there of. Lunch/dinner.....quadrinity cooked up with bigger sliced shrooms. Add some beef stock and cook for five minutes or so. Next add some al dente quality wide egg noodles...simmer a few more minutes; and stir in some goat cheese and earthy seasoning ...like provence. Pizza/appitizer....take your cooked quadrinity and give her a go in the food processor/blender. Use that as your base/sauce for pizza/bruschetta ....next layer with whatever floats your boat...but must top with some sort of white cheese Quote Link to comment Share on other sites More sharing options...
