Eggs Au Gratin

This is an egg dish I make for breakfast

16 hard boiled eggs peeled and sliced

2 cup of white sauce

3/4 cup of grated jack cheese

3/4 cup of cheddar cheese

1/2 cup of medium onion diced

Breakfast sausage (optional)

White sauce

1/4 cup of butter

1/4 cup of flour

2 cup of milk

Melt butter and add flour and stir. simmer for 2 minutes while stiring.Stir milk while adding and heat for 4-5 minutes. Add jack cheese and onion and cook for 2 minutes.

Put some cheese sauce in a greased casserole dish,just enough to cover bottom. Then a layer of sliced eggs. Then sausage if used. Keep layering till you have just enough cheese sauce for top. Sprinkle on cheddar cheese and bake for a half hour at 350 or till heated threw.

You will like this and I think lightly smoked eggs would go well with it. Fresh crosants go good with this to. Ill be makeing this Xmas morning so Ill try to post a picture. I make it the night before and then refridgerate it and heat it in the morning.Takes a little longer to heat after its cooled.
