Smoked panfish

This is the recipe my dad used for many years.I use it also.

3 Cups of water

2 Tbs salt

1/2 Cup brn sugar

1 tsp worschester

1/2 tsp garlic powder

Put the fish in for 4 hrs.Make sure it is covered by brine.

Remove the fish and smoke for 45 min.then leave it in the smoker until done.All depends on how big the fillets are.I leave the skin on 1 side to hold it together.
