Walleye and Wild Rice soup

Made this up last night. Started out with a basic fish soup recipe and changed it up to turn into this... turned out pretty darn good... not at all your typical meek, cream based fish soup...

Ingredients

1/2 onion, chopped

1 medium carrot diced small

1 stalked of celery sliced

1 clove garlic, minced

1 - 1 1/2 tsp chili powder (your taste)

1 box or 2 cans chicken broth (use a good quality broth)

1 can rotelle w/green chile peppers

1 teaspoon ground cumin

1 can fire roasted diced tomatoes

3/4 cup diced bell pepper (I used 50-50 red green)

3-4 slices canadian bacon (optional)

1/2 - 1 pound walleye fillets (really any fish will work)

1 - 1 1/2 cup cooked wild rice

1 cup plain nonfat yogurt

Salt and Pepper to taste

In a large saucepan add a tblsp of olive oil over medium high heat. Add the onions, carrots, celery and diced canadian bacon and saute, stirring often, for about 5 minutes. Add the garlic and chili powder and saute for 2 more minutes.

Then add the chicken broth, rotelle and cumin, stirring well. Bring to a boil, reduce heat to low, cover and simmer for 20 minutes.

Next, add the tomatoes, bell pepper, rice and fish. Return to a boil, then reduce heat to low, cover and simmer for approx. another 5 minutes. Gradually stir in the yogurt until heated through.

I think it turned out fantasic! Has a little heat, but not 'hot'. Very flavorful! Very easy to make! Not too sure if the Canadian Bacon did what I was looking for (used mostly for texture), I think I may try a small amount of a good quality diced ham or a thicker sliced Canadian bacon... even think a few good quality larger shrimp added in would be a nice addition.

i realy like the ingrediants of this fine soup. canadian bacon [the kind you buy in the store]is realy not heavily smoked like ham shanks and pork hocks or even common smoked hams. if you were looking for more of a "smoked ham type" flavor i would buy a bone in ham slice. but maby that's not what you were looking for. actualy the reciepe sounds fine by itself. thanks. good luck.

Huuum, I'm having Walleye tonight. I wish I had all the stuff on hand to give it a try. It does sound like you may have put in a little more heat then the wife would like, so if I try it I may have to add heat to taste after I pour her out some! wink

Just go with one tsp. of chili powder or even 3/4 of a tsp. The cumin isn't all that hot and one can of rotelle isn't all that bad. I'd say as written it's between mild and medium on the salsa scale...
