Pepper Stew

Found this on the internet and made it during our last cold snap - It was really good! I brought the left overs to work and got asked for the recipe a few times. I have since made it again for the family I was staying with "down south" and they raved about it. If you like life a little spicy - give it a try.

Original Recipe Yield 6 servings

Ingredients

1 1/2 pounds lean ground beef

2 small garlic cloves, crushed

1 sweet onion cut into 1/2-inch slices

1 green bell pepper, chopped

1 Anaheim chile pepper, chopped

3 fresh red chili peppers, chopped

1 fresh jalapeno pepper, chopped

2 (10.5 ounce) cans condensed beef broth

1 (10.75 ounce) can condensed golden mushroom soup

1 (15 ounce) can tomato sauce

3 tablespoons Worcestershire sauce

1 (10 ounce) can white corn, drained

1 pinch ground cumin

1 pinch curry powder

1 1/2 cups water

1 tablespoon salt

2 tablespoons ground black pepper

Directions

Place the beef in a skillet over medium heat, and cook until evenly brown. Reserving juices in skillet, transfer cooked beef to a bowl, and mix in 1 clove crushed garlic. Stir remaining garlic, onion, green bell pepper, Anaheim chile pepper, red chili peppers, and jalapeno peppers into the skillet. Cook until tender; drain grease. Transfer vegetables to a large pot over medium heat, and mix in broth, soup, tomato sauce, and Worcestershire sauce. Bring to a boil. Reduce heat to low, and mix in corn. Season with cumin and curry. Pour in water, and mix

in cooked beef. Season with salt and pepper, and continue cooking 15 to 20 minutes over low heat.

The stuff I made in Phoenix was maybe about that 4 to 5 level - but when I tried a slice of the jalapeno it tasted like the green pepper. The stuff I made here in MN was probably an 7 or 8 - But that jalapeno burnt my tongue. The stew wasn't hot on my tongue/mouth so to say but my bald spot sweat a little as I ate it!

On web site I found it on, one of the comments said they left the jalapeno out and it was still good. I'd try that if I were you eyeguy. The red chili peppers and the anaheim pepper will give it some pep but without the jalapeno you heat level will go down.

    • Chicken mine,  melded in Mccormick poultry seasoning for 24 hours.  Grill will get a break till the frigid temps go away!
    • we had some nice weather yesterday and this conundrum was driving me crazy  so I drove up to the house to take another look. I got a bunch of goodies via ups yesterday (cables,  winch ratchet parts, handles, leaf springs etc).   I wanted to make sure the new leaf springs I got fit. I got everything laid out and ready to go. Will be busy this weekend with kids stuff and too cold to fish anyway, but I will try to get back up there again next weekend and get it done. I don't think it will be bad once I get it lifted up.    For anyone in the google verse, the leaf springs are 4 leafs and measure 25 1/4" eye  to eye per Yetti. I didnt want to pay their markup so just got something else comparable rated for the same weight.   I am a first time wheel house owner, this is all new to me. My house didn't come with any handles for the rear cables? I was told this week by someone in the industry that cordless drills do not have enough brake to lower it slow enough and it can damage the cables and the ratchets in the winches.  I put on a handle last night and it is 100% better than using a drill, unfortatenly I found out the hard way lol and will only use the ICNutz to raise the house now.
    • I haven’t done any leaf springs for a long time and I can’t completely see the connections in your pics BUT I I’d be rounding up: PB Blaster, torch, 3 lb hammer, chisel, cut off tool, breaker bar, Jack stands or blocks.   This kind of stuff usually isn’t the easiest.   I would think you would be able to get at what you need by keeping the house up with Jack stands and getting the pressure off that suspension, then attack the hardware.  But again, I don’t feel like I can see everything going on there.
