Processing own venison into sausage -- costs?

Thanks for all the great info and offers to help guys. This is a great read and Reinhard's other post on sausage making as well! I usually take one deer a year via archery since we're in a lottery area - and I don't have a lot of time to travel to managed or intensive areas to hunt, nor have the opportunity to do a deer camp during gun season. But as the kids are getting old enough to hunt in a few years, I will have to consider doing this myself and reach out to you guys maybe for help.

I look at the initial cost like this...

I know what's going into my sausage.

The annual cost from this point forward is 25-30% of having it done at the locker.

I get far more variety and can tweak recipes to get them just right "for us".

We do both fresh and smoked sausage. We also use both mixes and from scratch recipes.

Add some high temp cheese for some of your sausages for a whole new experience.

So after as few years I've made up the initial cost.
