BLACKJACK
Hmmm...This makes me remember my Mom's simple "goulash" recipe...-brown hamburger in large skillet-boil macaroni-drain grease and add macaroni and 1 can tomato juice-simmer and yell at kids to get to the table-eat Mmmmm, goulash!!! Havn't made that in awhile.
stoneeyes317
I like Leaky's shepherds pie idea. Here's my recipe (from Tyler Florence):Add oil and butter to a large skillet/dish. When hot add onion, carrot, mushrooms, celery, garlic, salt and oregano; cook approx. 10 minutes. Add some tomato paste and continue cooking 5-8 minutes. Add hamburger, .25 Cup beef broth, a little more salt, pepper and worcestershire, stirring to brown meat 3-5 minutes. Transfer this to a baking dish large enough to hold it, top with mashed potatoes, some cheese and dot with butter if desired. Bake @ 375 for 40 minutes...eyes317

Leaky
RH - Woke up in a hotdish kind of a mood today and was going to go with the Italian Casserole you posted, but was missing a few main ingrediants and didn't feel like running to the store. Gotta try that one soon as well. Still have about six 1 1/2 lb bags in the freezer. I really load up on 80/20 Chuck when the price is right. Leaky
This turned out pretty good. I should have cut the potatoes a little smaller (used Baby Reds skin on). They were still pretty firm after 1 1/2 hours. I think this is going to be REALLY good setting up the fridge for a day and reheated. It made enough that I'll be able to also freeze some. (not sure how potatoes will freeze...we'll see.
Leaky
Decided to give the smoker a weekend off and found myself staring once again at a bunch of hamburger in the freezer. Have a hankering for cabbage rolls put don't feel like putzing with that. Also have a meaty bone from a 10 lb ham takin up space in the freezer that I'll need when Ribs go on sale again. So it's a pea soup and casserole kind of a day. Haven't tried this it, but it looks good. Pinapple Upside Down Cake that was posted on another thread will cook along side the casserole.CABBAGE ROLL CASSEROLE2 pounds ground beef1 large onion, chopped3 garlic cloves, minced3 (15 ounce) cans tomato sauce, divided1 teaspoon dried thyme1/2 teaspoon dill weed1/2 teaspoon rubbed sage1/4 teaspoon salt1/4 teaspoon pepper1/4 teaspoon cayenne pepper2 cups cooked rice4 bacon strips, cooked and crumbled1 medium head cabbage, shredded1 cup shredded mozzarella cheeseDirections1.In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in one can of tomato sauce and seasonings. Bring to a boil. Reduce heat: cover and simmer for 5 minutes. Stir in rice and bacon; heat through. Remove from the heat. 2.Layer a third of the cabbage in a greased 13-in. x 9-in. x 2-in. baking dish. Top with half of the meat mixture. Repeat layers; top with remaining cabbage. Pour remaining tomato sauce over top. 3.Cover and bake at 375 degrees F for 45 minutes. Uncover; sprinkle with cheese. Bake 10 minutes longer or until cheese is melted. Let stand for 5 minutes before serving. To borrow from The Carpenters, Rainy Days and Saturdays never get me down if I can spend it sipping a beer, listening to music and cooking up enough to eat for the next few days. Leaky
I'm usually my own worst critic when it comes to new recipes, but this was fantastic!!!! Been eating it for 3 days with the pineapple upside down cake for dessert. If you like cabbage rolls, this is the bomb without the work.I precooked the cabbage in a bowl with an inch or so of water in the Microwave. About 5 minutes. Also cooked it covered for 1/2 hour longer than called for. Took foil off, added the cheese, and cooked for another 10 minutes. Cheese doesn't work on regular cabbage rolls.Added a couple of pinches of brown suger and a splash of vinegar to the sauce. Thats it.Try this if you like cabbage rolls. reinhard1
well this was about 3 pounds of burger i made into my own kind of oriental burger meal. dont have the exact measurments but in the bowl i had the 3 pounds of burger, chopped green onions, you can see the minced garlic in the middle, sessame seeds, soy sauce, sesame seed oil, and chopped jalapenos. made into patties and put on the grill. later covered the burgers with carmalized onions, fried mushrooms and pepper jack cheese. not the best pictures but i''m working on it.good luck. Leaky
Found myself once again staring at 1 1/2 lbs of burger in the freezer yesterday. Next to that was a small bag of smoked trimmings I get when prepping St. Louis cut Ribs. I typically use this for beans. Earlier I had made homemade hamburger buns so this stuff was screaming at me.Into a big bowl went the burger, diced rib meat, diced onion and shredded cheddar bound together with a couple big plops of Sweet Baby Rays. Seasoned, grilled and topped with a thick slice of Muenster Cheese.Buttered and browned the buns on the grill. Thought I died and went to heaven.
