That being said, I have no idea how to prepare them. Has anyone made them before with some success? I put a lot of effort into getting him, I'd hate to screw this up. reinhard1 Posted September 6, 2011 Share Posted September 6, 2011 i dug up this one i hope it helps.1 to 2 lb sandhill breasts thinly sliced10 tbls soy sauce4 tbls brown sugar4 tsp minced garlic1 1/4 tsp cayenne peppercombine soy sauce, brown sugar, minced garlic and cayenne pepper. marinate crane breast meat for six hours, to overnight in the fridge. remove from marinade and place on plate.you need to let the meat warm just a bit befor placing on hot coals, once warmed to room temperature its time to cook. grill on bbq using a flat screen style tray, other wise the thinly sliced crane will fall on to the coals. cook crane until nicely browned just as with all waterfowl. do not over cook as meat is thin. it will cook very quickly depending on how hot your coals are. this makes a wonderful appetizer. never cooked one but this is the best i could come up with. good luck.
