RebelSS Posted August 28, 2011 Share Posted August 28, 2011 Went to my favorite Mom & Pop grocery yesterday for the pork they had on sale...meaty pork steaks $1.84 lb., and huge country style ribs for $1.48 lb. I don't know how they do it, but...had my butcher buddy cut me three 1" thick slab pork steaks, and bought a pkg of 3 huge ribs. Total price....$10.49 I'll take a pork steak over ribs anytime...just like them better. Decided to try something different with them today....Steak is marinating right now in concentrated apple juice. I'll take that out in a few hours, and rub it lightly with my rib rub. Going to get a good head of cherry wood smoking in the grill, and slow cook 'em. Made a sauce last week for some chicken out of 1/3 cup country style orange juice, (fresh squeezed) 1/4 cup apricot jam, and a couple of Tbsps of honey. Put in a tsp of my rib rub and microwaved it, stirring until it was all smooth. Gonna put this on the pig steak and see how we come out... Heck, they use a meat saw. Heheheee. Sorry, couldn't resist. Pork steaks don't come from the loin, they are cut from the shoulder. Same deal with country ribs. So you can get them as thick as you want. If you are a hunter, just buy a Boston butt and you can cut your own. That blade bone doesn't go all the way across, so that side is easy to cut. When you get to the side with the bone, get close with your knife, then all you need is a few licks with the saw. Quote Link to comment Share on other sites More sharing options...

Used to cut my own like that when I worked way back when at the local butcher shop....think that's when I became so enamored with them. This place consistently has pork this cheap, and it's WAY better than any store in town. Must have a secret supplier. Anyone live in Rochester? Head over to Silver Lake Foods and get those steak/ribs/butt roasts today!!! Love your posts and pics, thirdeye...but I think it's your fault I've gained 8 lbs this summer....!!
