Breakfast Recipe

Recommended Posts

I'm looking for a recipe I saw in the "cooking recipe's" section a while back but don't remember the name. I do remember that you weave bacon together then roll out sausage to put on the bacon with other ingredients on that. I know it's a vague discription but I can't remember the name of it. Any Help?

They are called bacon explosions or 'Fatties'. We make them all the time. My bro in law and I are smoking a brisket and make some bacon stuffed bacon to go along with it for the Brewers/Twins game tomorrow. I use a slightly sweet Italian sausage for a bit more flavor...

We stuff with crispy crumpled bacon, sauteed onion and red pepper, smoked cheddar cheese, smoked chipoltle tobascco, and Rudy's Red eye rub. Fold the sausage over and make sure it sealed well, put another coating of rub on the sausge log, pull weave over the sausage loaf and finish the weave so it is uniform and all edges are tucked in otherwise they will curl and unravel the weave. On the smoker at 225 for about 4 hours. Baste with a good quality BBQ sauce and let the sauce set up and thicken for 30 minutes or so. Slice and enjoy...

We generally make two... Left overs are used for b-fast sandwiches(awesome) or once we put on the bottom of an egg casserole... awesome also... not for those with a weak heart!

Good Luck!

Ken
