MNHuntress Posted March 10, 2011 Share Posted March 10, 2011 For all of you that might be doing well catching whitefish or tullipee, I thought I'd share this recipe with you. Alot of smoked fish is way too salty. This gives alittle sweet and alittle bit of salt. Here's the basics and you can add from there, also do not add any water. The juice is the liquid. Also if you smoke your fish flat not hung vertically, I top with alittle bit of brown sugar that melts in. Enjoy!Smoked Fish – Can be used for Salmon, Whitefish or TillipeesThe brine is the keyApple Brine1 gallon of Apple Juice½ cup regular or kosher salt1 cup brown sugarBrine for 24 hours, and smoke as you normally wouldCherry Brine64 ounces of Libby’s Cherry Juice½ cup regular or kosher salt½ cup brown sugar.Brine 24 hours, and smoke as you normally would Quote Link to comment Share on other sites More sharing options...
