Great Smoked fish recipe

For all of you that might be doing well catching whitefish or tullipee, I thought I'd share this recipe with you. Alot of smoked fish is way too salty. This gives alittle sweet and alittle bit of salt. Here's the basics and you can add from there, also do not add any water. The juice is the liquid. Also if you smoke your fish flat not hung vertically, I top with alittle bit of brown sugar that melts in. Enjoy!

Smoked Fish – Can be used for Salmon, Whitefish or Tillipees

The brine is the key

Apple Brine

1 gallon of Apple Juice

½ cup regular or kosher salt

1 cup brown sugar

Brine for 24 hours, and smoke as you normally would

Cherry Brine

64 ounces of Libby’s Cherry Juice

½ cup regular or kosher salt

½ cup brown sugar.

Brine 24 hours, and smoke as you normally would
