Care of bluegill/Crappie filets

Yesterday I caught a bunch of bluegill and crappie for the table. I was out of the needed ingredients to cook the fish that night so I placed the cleaned filets in a bowl of clean water and put the bowel in the fridge. I'll be eating them tonight!
Is there a better way to keep filets fresh that you want to keep for a few days (other than freezing).

One other thing, how many bluegill (6"-8") do you keep to feed one adult?
Whats you favorite way to prepare them?
For myself, nothing beats a good bluegill fried filet

I throw the fillets in a bowl with salt and cold water and toss 'em in the fridge overnight. Favorite way to eat them would have to be quick sticks or turning them into fritters, thanks to Crappie Magnet for that recipe!!

Put fillets in a bowl pour milk onthem enough just to cover fish. Set in fridge over night. I don't know how or why it works but it'll make aug. carp taste like hallibut. It makes the fish firm and gets rid of the muddy taste try it. It amazed me the difference it made.
