SEwalleye Posted July 14, 2010 Share Posted July 14, 2010 Can't take credit for it, but I found a recipe for a Guy Fieti "Killer Inside-Out Burger"2 lbs ground chuck1/4 lb bacon, cooked and chopped1/2 cup red onion minced3 tablespoon chorizo, mexican fresh style8 slices of swiss cheese4 kaiser rollsDivide ground chuck into 8 equal parts and form into patties.Over medium-high heat add bacon & onions and cook until 3/4 done, then add chorizoSeason with salt & pepper and place on paper towel to cool.Layer 1 slice of chesse onto center of 1 patty, add 1/4 of bacon mixture, top with 1 slice of cheese, then add another patty on top and gently seal the edges. Repeat with remaining patties.Cook over medium heat of 3 to 4 minutes per side then remove pan, cover and finish in oven at 250 for 10 minutes. Serve on kaiser rolls.I have found that the brand of chorizo makes a difference, so you will have to experiment. Also, use ground chuck as it is important to form and seal the patties together. I grill these and it works fine. Finally, I use different cheeses.I love this recipe, nice little extra "kick" with the chorizo that is not over the top.
