Chef Posted July 27, 2009 Share Posted July 27, 2009 Ingredients: 4 C. cooked Orzo3/4 C. crumbled FetaZest from 1-fresh Lemon1/4-1/2 C. coarsley chopped Calamata Olives1/4-1/2 C. Coarsley Chopped Roasted Red Bell Peppers1/4 C. (combined) Fresh Chopped Parsley, Rosemary, Tarragon, Oregano.1-Large Chopped Shallot1-Clove Crushed Garlic Dressing--3-Tbsp. Fresh Lemon Juice, 2Tbsp. Dijon, cracked pepper, 2Tbsp. Red Wine Vinegar, 3/4 C. Olive Oil--combine all ingredients. Procedure: Rinse al-dante Orzo w/cool water, place in large stainless or glass bowl, toss in all ingredients, mix and then add dressing to taste, let flavors blend 30-60 minutes if possible before serving.
