anyone have some tips or recipes on smoking hole birds.

I have never done a phesant. but I have done a turkey.. just did a regular smoking brine, nothing real special and it turned out great.

deitz, regular smokin brine is just salt and water for an X amount of time then smoke.

I use Brown sugar and picking salt, but yes.. 1 cup of each for 1 gallon of water.

I smoked a couple pheasants without doing any brining and they were fantastic. I would do the same thing again.
