I have red peppers, cauliflower, onions, snow peas, baby carrots, jalopenos, and garlic in there... I blanched everything seperatly but put the garlic in uncooked. Blanch times: red peppers - one minute cauliflower - 2 minutes snow peas - 2 minutes baby carrots 3 minutes Each veggie was thrown in boiling water then after the times was put in ice water to stop cooking and cool The onion I sliced in rings and put in my brine of: 2 cups white vineger 1 cup water 1/3 cup sugar 1 heaping tablespoon salt This I brought up to a steam then let cool I layered everything in the jar with about 25 cloves of garlic and a dozen slices of those nacho jalopenos This seemed like a good starting recipe I can tweek in the furture. I wanted to add pickling spice and/or mustard seed but decided not to as I could see someone chomping down on a piece stuck in some cauliflower. It certainly didnt need it.
