Pheasant on the grill

here is how my family prepares the pheasants that we do manage to take home (few and far between). its a very simple recipe with great results

take wood skewers and soak them in water for a few hours so they dont light up on the grill.

we take the breast meat of the phesant and cut it into strips. the strips are then rolled up around a healthy chunk of jalapeno. after that, the skewers are put on the grill to cook. in the last few minutes of cooking we brush the bird with some BBQ sauce. SBR is our favorite but its all up to you.

I do a very similar style of pheasant that is rediculously good.

Cut the breasts into strips like you said, marinate them in Italian dressing. Then somehow spread cream cheese on each strip (its kind of messy) and stick a slice of jalapeno in there and roll up. Wrap in a slice of bacon, toothpick through them and grill til done.

Unbelievable. Can't take credit for the recipe though, got it from the cooks at my buddy's pheasant ranch.
