This was okay except we just had turkey for thanksgiving and it wasn't that long ago I just finished up the leftovers from that one. Now don't get me wrong. I think you could search the world over and not likely find anyone more willing and eager for leftovers. In most cases, I prefer them but turkey and dressing and (?) can get old after a while even for me. Yesterday I was brainstorming ways to add interest to the left over turkey breast. Here's what I did and my kids loved it. I call it Turkey Breast Sikaso (Osakis spelled backwards).3 C. cubed turkey breast1/2 C. finely chopped onion2 cloves pressed garlic3 fresh mushrooms chopped1 stalk celery chopped1 tomato cubed3 Tbs. chivesSeason to taste (season salt, pepper, season salt,...)1/2 C. chicken broth3/4 C. shredded mozzarellaLightly sauté the onion, garlic, chives, mushrooms, and celery in butter. Add turkey breast, seasoning, and broth. Simmer but don't cook it dry.When most of the liquid is absorbed, remove from heat and cover generously with the cheese.For an added treat, add a touch of pineapple juice.
