IMO the red color has little to do with either science or the fish. It is an eye catching color for the fisherman in the store, and if it gets sold then the marketing objective has been achieved.

Also, the red end of the visible spectrum has the longest wavelenth at about 800NM and the blue end is the shortest at about 400NM.
