I'll put a plug in for the trail in Mendota for a leisurely ride (great for kids). Nice view of the river, wide, flat, and when you are done you can ride to Axels in Mendota for a bite to eat.

I'll also second the Cannon Trail. Each year for the last few years my family loads up to ride it as a last rite of summer before school starts. We start in Cannon Falls and take a Burley that we load with food and drink and some things to play with. We then ride to Welch and stop and eat and play. Then we ride back to Cannon Falls and drive the car to Welch and go tubing down the Cannon River. Afterwards we go get some ice cream in Welch and then head home. Good scenery on the trail and in the river. The trail is flat and easy to ride and it's a good bit of exercise. It's a great family day and quite a ride for our kids.
