rowdyf Posted March 2, 2008 Share Posted March 2, 2008 Thought I'd share a recipe I just finished for canning venison.Instead of the old onions/peppers/water, I used the following:Zesty Italian seasoning mix (dry)tomato juiceonionsI brown the meat (hot pack) mix the Italian seasoning dry in with the meat, add a few onions, and cover with pure tomato juice. Then into the canner at 11lbs for 75 minutes (pint). This is the best canned venison I have ever had!I also tried some onion soup mix and 50% tomato juice but haven't tried it yet.I'm always looking for new recipes for canned venison so if you have a different one, please share.
