pluckem Posted January 11, 2008 Share Posted January 11, 2008 Has anyone on here tried to add fruit to their homemade sausage. I have noticed a lot of meat shops in Minnesota offer these. I have had blueberry and wild rice summer sausage and also cranberry summer sausage and it was excellent. I am thinking about adding some in to the next batch, but was curious to see if anyone else has tried it. Do you think it would work better with fresh berries or with dried berries?I would also thick applesauce added to some breakfast sausage would be great. lureman Posted January 18, 2008 Share Posted January 18, 2008 We have made sausage with jalepeno's, brown sugar, black pepper, and colby/jack cheese which are excellant. We just add the extra stuff to our polish.Have experimented with wildrice and celery but have yet to get a good mix with a taste we like. I guess we will keep plugging away.
