Moses2531 Posted November 16, 2007 Share Posted November 16, 2007 I go to school down in Sioux Falls and am bringing home a couple Pheasants to join my mother's Turkey on Thanksgiving... I probably wont beat her turkey,but I'd like to put up a decent fight, just wondering some suggestions on making some delicious pheasant, I got breasts and whole birds... Thanks! Jim Almquist Posted November 16, 2007 Share Posted November 16, 2007 Instead of trying to compete with the main meal you could chunk up the breast and cook it up with some wild rice for a side dish. Jim Almquist Posted November 18, 2007 Share Posted November 18, 2007 Pheasant with wild rice casserole 2 cups cooked wild rice 1 onion finely chopped 1 cup fresh parsley, finely chopped 1- 10 1/2 can of cream of mushroom soup 1/2 soup can of milk 1 cup grated cheddar cheese 2 pheasants, cut into pieces flour shortening few shakes of paprika Heat mushroom soup and milk. Add to wild rice,onion and parsley. Roll pheasant in flour. Brown in shorting. Pour rice mixture into greased casserole. Sprinkle with paprika. Cover and bake at 325F for 1 hour. Here is a chicken casserole that you could substitute with pheasant. Chicken Casserole 1 cup wild rice raw 2 cups chicken ,diced, cooked 3/4 cup mushrooms 1/4 cup pimento,chopped 1/3 cup green pepper,chopped 1 1/2 cup evaporated milk 1/2 cup sliced almonds 4 tbsp butter 5 tbsp flour 1 cup chicken broth 1 tsp salt Precook wild rice. Melt butter, add flour and blend; add broth and milk. Cook until thick, stirring constantly. Add salt. Mix rest of ingredients together and pour into greased 6x10 pan.Pour sauce over all. Top with sliced almonds. Bake at 350F for 50-60 minutes.
