Pickled Pike recipies?

Hey guys,

I just got back from my two week vacation in Cass Lake and have several smaller pike in the freezer. Somebody I work with said they are the best for making pickled pike. Anybody out there got a good recipie for pickled pike. Please give me good directions as I am a dinosaur and need step by step on cooking. LOL

More information than you'll ever need. I've made the recipe originally posted by "Coldone" (reposted by "Flash" on that thread) several times, and it's always turned out great.

Chunk the fish, Dissolve enough salt in water to float an egg. Add fish to cold brine & leave for 48 hours in frig. Drain & rinse fish. Add clear white vinegar to cover fish & let stand 24 hours in frig. Drain and discard the solution.

Layer fish in Qt. jars with onion slices and lemon slices. Cover with solution of 4 cups white vinegar & 3 cups white sugar,dissolve first then, add 1 cup white silver satin wine & 1/4 cup pickleing spice. Let stand 2 to 3 weeks and enjoy.
