I don't fillet mine I just make a slit down the belly and gut them out. Then when I cook them I put seasonings and onions and some butter in the belly and cook them in the oven or grill in aluminum foil. When they are done just chop off the head and peel the skin off and enjoy.

it depends on how I am going to cook them....

If I am going to gril them, I'll get them like mitch, and cook them whole.

If I am going to smoke them, I fillet them out and cut them lengthwise starting just behind the head, right along the backbone to the tail, leaving the rib bones intact. The bones will peel right off after they are cooked. Skin is left on.

If I am going to fry them, I'll fillet them, and then trim out their rib bones. I'll also skin them by starting at the tail and sliding my knife between the skin and meat, and bringing the knife forward until the skin and fillet is separated.

If you catch a larger salmon, there is also the option of steaking them out.
