LABS4ME Posted November 1, 2006 Share Posted November 1, 2006 try this one...10 lbs ground venison10 lbs ground pork shoulder1 cup brown sugar1/2 cup dried sage7 tblsp salt3 tblsp ground black pepper1 tblsp dried marjoram1/2 tblsp crushed red pepperpinch or two of ground clovesgrind meat through a course gratemix all ingredients thoroughly for 5 minuteslet sit in fridge for 4 hours so ingredients blend throughout the meatstuff into casings or make patties or freeze in bulk packagesgreat breakfast sausage.variations... add a bottle of maple syrup to make maple sausage or 2 lbs cooked wild rice for wild rice sausage.
