Trout recipes

Anybody have any good trout recipes? Ive been deep frying them in oil and Im fine with that. I want to experiment with different methods. I baked a couple once, and it didnt turn out like I planned. I know i can always smoke them. I saw that crab stuffed one on here. Im going to try that this weekend. any other ideas?

There have been a few threads on here regarding trout recipes, do a search for them.

Another good simple alternative is to grill the trout whole and stuff the belly with green onion stalks and some salt (lemon optional). The onions will steam in the belly while grilling. When the fish is done, pull off the head, peel back the skin and fork the meat off the bone.
