A Great Lakes Coho with out a doubt is far far better then Chinooks.
Ocean run Coho and Chinooks are closer in taste but the Coho still wins out. Saying that an Ocean run Chinook is far and away above a great lakes Chinook in taste. They don't even come close to comparison.

We're going out to Lake Michigan for some chartered salmon fishing and was wondering if there is any place in the east metro that does a good job smoking salmon.

I don't know about east but you could try Hackenmuellers in Robbinsdale.

Thanks for the feedback. I'm looking to book a Lake Michigan Charter next year and would like to decide what time of year to go and what fish to target. Looks like an early season trip for Cohos will be the way to go.
