fishinphyl Posted April 6, 2004 Share Posted April 6, 2004 Hey my mom was from Texas and made great chili - but never used a recipe.She used home canned tomatoes, pinto beans (not kidney) beef, chili powder, salt, pepper and you could use onions if you like them. I just dump it all in a pot until it tastes good! Kinda sorta... different every time really. 2 lb Sirloin, cut into about 3/4 inch cubes.2 lb coursley ground beef. 80-85%3 cups chopped onion1 cup chopped green pepper1-2 diced jalepeno peppers, or if you want to fire it up, a habenero is nice once in a while (Wife won't eat it though)3-4 cans rotel tomatoes (for some reason I like rotel a lot better than del monte or some other brand)Tomato Juice & V8 (I use about a 4-1 ratio)Chili PowderCayenne PepperCrushed Red PepperCumin Onion powderGarlic saltFlourIn a large ziplock bag put about 1/2 cup of flour,1tbsp chili powder, 1tsp of garlic powder, 1tsp of onion powder, 1/2-1tsp of cayenne and a bit of cumin. The Cayenne can be adusted to your taste. Add sirloin and shake to coat. In your pot, add a bit of oil, and heat. Sear sirloin until it is brown, but not fully cooked. Remove sirloin from pot and set aside, do not drain or clean pot. Add your onion and peppers and brown ground beef. Season beef with Chili Powder, cayenne, garlic and onion powder while browning. Add tomatos. Add sirloin. Use tomato juice and V-8 to bring to desired consistancy. Simmer on low heat for 2-4 hours. Season to taste while cooking. I'll add hot sauce to get it where I like it, along with copius amounts of chili powder and cayenne.Serve with sliced cheddar cheese and cinnamon rolls... Guest Posted May 7, 2004 Share Posted May 7, 2004 1.5 pounds venison roast, cut into small pieces.3 cloves garlic (not in a bottle or jar, real cloves), slice paper thin.1 Large onion, sliced and diced.1 green pepper, sliced and diced.1 yellow pepper, sliced and diced.2 jalopenos, sliced, NOT diced.(On the peppers and jalopenos, remove the seeds)Cook this is a pan, browning the meat, melting the garlic, and cooking the peppers, onion, jalopenos.Once browned, place in pot with:1 tablespoon of Oregano1 tablespoon of Chili powder1 teaspoon of cayene pepper1 teaspoon Cumin1/2 teaspoon salt1 can crushed tomatos1 can stewed tomatosslow cook (barely simmer) for 2 hours.Then add 2 cans of Chili beans.cook another hour (slow cook, again barely simmer)She is a bit spicey and hot.........------------------Let 'em go so they can grow!!!
