Any Atkins recipes?

Oh yeah I've got lots of recipes. I've been doing a low carb diet for 11 months now(minus the holidays).

As far as cooking fish here are my two favorites.

Fried fish

1/2 cup atkins bake mix
1 cup parmesian cheese
2 tbsp cajun spice
1 tbsp lawrey's season salt

Mix dry seasons together. Roll moist fish into mixture and fry in oil at 350 degrees.

Very good. The oil gets pretty dirty by the end but the wife and kids really like this one.

Another one I use I got off this forum. It the bacon rolled fish done on the barbeque. Just cut your fish into about 1" chunks. Season will a little Old Bay or season salt and wrap half a piece of bacon around it and secure with a toothpick. Barbeque until the bacon is done. Helps to soak the toothpicks in water for a while before hand so they don't burn too bad. I like it best with thick pepper bacon.

If you're interested I can direct you to some good cookbooks for low carb recipes. They cover everything including desserts.

I'm down about 80 lbs with about 60 to go to my goal weight.

After failing to be able to bend down to scoop out the slush when ice fishing, I decided it was time to loose the belly. Even the bellybra was getting too tight. wink.gif My wife has me on that South Beach deal, similar to Atkins.


Grilled Salmon with Rosemary

1 pound salmon
2 teaspoons extra-virgin olive oil
2 teaspoons lemon juice
1/4 teaspoon salt
pinch of black pepper
2 cloves minced garlic
2 teaspoons rosemary leaves chopped, or 1 teaspoon crushed dried rosemary leaves
capers, optional

Cut fish into 4 equal portionsmix all the ingredients and brush on the fish.

Grill about 5 minutes per side, or broil 4" from the heat for 4 to 6 minutes, top with capers.

4 servings;
231 calories, 23g protein,
1g carbohydrates, 15g fat, 3g saturated fats.
213mg sodium, 67 mg cholesterol, 0g fiber

Surprise mashed potatoes
4 cups cauliflower florets
1 ounce, "I Can't Believe It's Not Butter" spray
1 ounce "Land O' Lakes Gourmet Fat-Free Half & Half
Pinch of salt
Pinch of pepper

Steam or microwave caulifower until soft. Puree in a food processor, adding butter spray and Half & half to taste. Season with salt and pepper.

4 servings,
81 calories, 2g protein
5g carbohydrates, 6g fat, 2g saturated fats,
82mg sodium, 4mg cholesterol, 3g fiber.

Actually, its not that bad...not potatoes, but not bad...

Hey thanks guys.
I don't have much of a prob cooking fish. Good lokin recipes though. I can't do too much shopping for meat as its spendy. I am a bow hunter and have lots of homeaid saus. and steaks of venison and my family buys beef in bulk so I have lits of burger. I was thinking that I may be able to utilize pressed ground beef for a crust substitute?? I have been doing some ven stiry fry with packet seasonings with green beens and broccoli. I don't have he cash to buy the atkins book as my tranny just went out. Thanks for the recipes guys.

Venison steaks? Maybe thi will work for you.

Mainated Lodon Broil

2 tablespoons olive oil
1/2 cup dry red wine
3 cloves minced garlic
3 tablespoons fresh parsly
1 tablespoon chopped fresh oregano
1 bay leaf
1/2 teaspoon pepper
1-1/2 pounds sirloin, top round steak.

(if you have dried parsley and oregano, use less, I would guess. I never use a bay leaf either)

Mix all the stuff together in a bowl, place the steak in the bowl, coat steak well. Put in refrigerator to marinate for at least 4 hous, overnight better.

Broil for 5 minutes on each side, of grill.

For a snack, I like deli ham with a tablespoon of light cream cheese spread on the ham, and roll it up.

I'm typically frying up my hamburger with lots of onions and mushrooms, a little chipolte tobassco sauce, sort o fa hamburger steak, sometimes some cheese on top.

Something a little different anyway.

I picked up a couple of Low carb recipe books that a freind of my wrote. They run about $10-12 each at barnes and noble. Very good recipes. You can do an author search for Nancy Moshier. Her books should come up.

Recipes for everything including desserts. Just had low carb pizza this weekend.

I also use the low carb tortilla wraps made by Le Tortilla Factory. Use them for soft shell tacos, fajitas, pizza crust and sandwich wraps. They are pretty good. There's getting to be a lot of options out there.

Had a chance to try out some carb-free breading last night on some fried crappies. This was actually so good I'm surprised people that aren't on the diet (like me) don't eat it. Here goes:

1 bag of spicy pork rinds

1/3 cup parmesaen cheese

1 teaspoon garlic powder (I used a little more than this, and I used garlic salt, turned out fine)

1 teaspoon onion powder (I used a little more than this, and I used onion salt, turned out fine)

1 teaspoon mustard powder (optional, I didn't have any so I didn't use it, turned out fine)

Crush pork rinds using a food processor or good 'ol elbow grease. Add remaining ingredients and mix well. Dip fish in eggs and use the recipe just like you would any other breading. I used fish, but I see no reason why it wouldn't be just as tasty on anything else. Sticks to fish very well so they turn out nice and crispy. Enjoy!!
