Catfish Batter Ideas?

Hi,
I can't think about food after reading the "sun rendered fish oil" post. Ugghhh.

Anyway, this summer I'm gettin' pretty not bad at catching Channel Cats, and I'm looking for breading/batter ideas.

Our favorite is:

"About" (to taste)

1 cup corn meal
1 cup flour
2 TBS Chili Powder
Garlic Salt
Onion Powder / salt
touch of cumin
few red peper flakes


Use even more to taste... you cant use too much flavor (except for salt)... so be careful

Fish cut into thin strips / chunks

Dip in mix of 1 or 2 eggs and cup of milk or so...

Roll around in the mix

Fry at 350 in peanut oil ($20.00 for 6 gal as Sams Club) is reusable (filter through paper towles back into jug)...

Cook for about 3 to 5 minutes (depending on thickness, too done and it will dry out)...

Also try foodtv dot com and search for fish batter, it has WONDERFUL recipies (as does the cooking forum here)...

Lately, I've been frying up some cats with Shoreline "Cajun" batter. I guess that's the easy way out, but it's good stuff! I like to cut the bigger fillets in to smaller catfish fingers too. Vern
