Kidd Posted January 12, 2003 Share Posted January 12, 2003 City_Slicker, a good beer batter has less to do with ingredients than it does with the consistency of the mix. I simply use a couple cups of flour, maybe a Tbls, or so, of baking powder, a smattering of lemon pepper and salt to taste. Crack an egg into the dry mix, add beer and stir until the lumps are gone. Dab the fillets in flour and then into the wet mixture. Make sure the grease is ready and away you go. If the mixture is to thick, add more beer. If it's to thin add more flour.
