Duck jerky!

I have a very sensitive tongue for wild game and I'm always looking for ways to consume the taste of some birds.

I got a meat grinder for Christmas (attachment for a Kitchen Aid mixer) and I had always wanted to try to make duck jerky.

I grounded up all the duck meat (divers, puddle together) I had in my freezer and then left the meat in a large bowl filled with salt water over night. I then drained the water from the meat and dried with paper towels.

I have had an American Harvest (AH) Jerky Gun, and AH dehydrator for awhile. I used the AH seasonings too. Mixed the seasonings and left over night in fridge.

Eventually made jerky sticks with the gun, dehydrated it for approx. 3 hours.

The best jerky I have ever made! It blew away my favorite goose and venison jerky hands down! I figured if it failed, it would be doggie snacks, but this was not the case!!! For all you waterfowlers, I would definitely try it!

CD, last weekend I tried out the American Harvest jerky gun that I got over the holidays on some ground vension, it worked good!! Nice even strips! I'd recommend it to anyone that likes to do jerky. I do wish the slot was a little wider...

May have to think about getting the wife a grinder for her Kitchen Aid, that duck jerky sounds good!

It is fantastic, you'd never guess it was straight duck meat. I have a feeling that you have to soak the grinded meat in salt water for about 12-24 hours to get most of the blood out! The meat grinder (attachment) was about $50 at Fleet Farm.

I guess my taste buds work differently. I tryed goose jerky, and it was execellent, the thing is, I don't think it even came close to being as good as venison jerkey. maybe its the way it was prepared? any good recipies would be great.
