I don't know what prop is best for the 1800 Fisherman. I have a 140 on a 1750 Sportfish. I am running the 14x21 Suzuki aluminum and get good performance. 43mph @ 6000rpm WOT, full load.
Most of the input I received when I posed this same question was to go with the 14x21 AL or the 14x19 SS.
Propping has taken the entire summer for me but I think I'm close now.

I have a 13.25 X 21 on at 5000 wot and it run to 38 can't trim as it cavitates immediately. I have also had a 13.25 X 19 on and it went to 5500 and 41 with a lot less
cavitation, both props are hustler AL. This looks like a terrific forum site thanks for the help

My advise would be to get rid of the Hustler prop.
I tried the 13 1/4 x 21 and 13 1/4 x 23 Huster on my 1750 Sportfish and neither worked. That is when I went with the 14x21 Suzuki and I am now close.
Here are my results with the three props I have tried. My motor is mounted in the third whole from the top. All test results were with a full tank of gas, two guys and the dog (normal load for me).
Hustler 13 1/4 x 21: 42mph @ 6400rpm.
Hustler 13 1/4 x 23: 40mph @ 5500rpm.
Suzuki 14 x 21: 43mph @ 6000rpm.

at 14 x 20 and see what goes..
One other question for shouldbefishn
What hole is your motor mounted to the transom in mine is all the way down with the cav plate about 1 inch below the hull
